Today is the last day of practice this week,
this time I was given the mandate for the ADH 3 class. The material provided was basic cutting of
lamb and the one who provided this material was Chef Dino who is the Executive
Chef at the Gammara hotel.
Before showing the basic cutting lamb, Chef
first gives material about the part of the lamb itself, namely primary cuts and
secondary cuts. Today I only act as a
supervisor so my job is only to oversee the running of activities in the
kitchen and also help the chef when showing to ADH students to slightly
facilitate the work. besides watching
here I also have the responsibility to provide a little information about the
material.
During
the process of showing students, the chef also explained about the pieces,
ranging from large pieces (primary cuts) to small pieces (secondary cuts). Not forgetting, the chef also gave a chance
to some students to practice it directly.
