Daily report #3 ( English version )

English Breakfast And Indonesian Breakfast

      In this practice, Wednesday 07 februaray 2018 I go to campus around 06:30. We entred to he kitchen at 07:00. And than immediately rushed to the cold kitchen and marched in the rules of one line. On that position, senior incharge then performs the attendance for the 2nd semester b. after the absence we were given directions on the things that we had to prepare today. As in previous practices senior incharge devided us to several groups. Due to he fact  that our practice today are English breakfast and prepare for indonesian breakfastwe are divided based on the menu. Which group 1 to group 5 just prepare Indonesian breakfast, while group 6 to 10 in incharge to making muffin for American breakfast.
      My friends and I who where  a group 10 to make English muffins, same as the menu given yesterday.  Once the materials and the steps  they are madr are the same as yesterday’s procces. That’s the ingredients and the manner of manufacture are listed below :
English Muffin
Ingredients :

180 gr Water
4 gr Instan yeast
250 gr Hard flour
4 gr Salt
4 gr Sugar
6 gr Non fat milk solids shortening
4 gr Shortening

Procedure : 

1. Mix the ingredints by applying the straight dough method.

2. After the dry materials were mixed, than pour the water, shortening non fat, and shortening by using mixer in the second speed.

3. Stir agan using a rubber spatula or knead until the dough appears dull.

4. After the dough was rounding the dough than rest for a moment.


5. Scalling portion, every sphere weighs 20 gr. Make 3 rounds for 1 cup then rest in the proofing cabinet about ±30 minutes..

6. Remove the dough from the proofing cabinet than baking for ±30 minutes.

7. Cooling down.


      After that, as usual we have to clean the area of  kitchen commonly called General cleaning. General cleaning is done after the senior 4th semesters was finished to prepare the menu wwhich will be made tomorrow. We started the General cleaning at 04:30.. in general cleaning this time the fourth semester do gc in the area of main kitchen, while we do gc in Bath room and cold kitchen area.. once completed we are ordered to gather in a one line position behind  the kitchen. We left the kitchen at 05:30..
